Description
Botani comes from Jorge Ordoñez and Co in D.O. Málaga and Sierras de Málaga, a project built with Austria's Kracher family. It is made entirely from Moscatel de Alejandría grown on old vines of around 70 years in Almáchar, planted on north facing mountain slopes at 400 to 600 metres. The altitude and cooler northern exposure are the key here, holding back sugar and preserving acidity so that this famously aromatic, often sweet grape can be made in a dry, fresh style. The fruit is hand harvested and gently pressed, and fermentation takes place in stainless steel at low temperature over about seven months to protect the delicate aromatics. The colour is pale straw. The nose is expressive and floral, with honeysuckle, juicy peach and citrus fruits such as kumquat and lime. The palate is dry and vibrant, the Muscat perfume carried by bright acidity to a clean finish, with the fruit weight of the old vines giving it substance. Serve chilled at 9 to 11 degrees. It suits lightly spiced dishes and simple roast poultry.
