    Borsao makes Tres Picos from old-vine Garnacha grown on the stony slopes of Campo de Borja in Aragón. Five months in French oak frame ripe raspberry, plum, black pepper and a wild herb edge in a generous, full bodied red.

    Tres Picos comes from Borsao, the Campo de Borja cooperative that built its reputation on Garnacha, the variety best suited to this corner of Aragón. The grapes are drawn from old vines planted on poor, stony slopes at the foot of the Moncayo massif, where low yields concentrate flavour and the cold winds off the mountain temper the warm Mediterranean climate. Garnacha ripens fully here, giving high natural sugar and the 15 percent alcohol that lends the wine its weight, while the altitude and diurnal swing preserve enough acidity to keep it fresh. Fermentation is followed by five months in French oak, a deliberately short ageing that rounds the tannins and adds a light vanilla and spice frame without masking the fruit. In the glass it is deep and saturated, with ripe raspberry and plum on the nose, black pepper and a scrubland note of thyme and liquorice. The palate is full and warming, with soft, rounded tannins and a long, spiced finish. Serve at 16 to 18 degrees with grilled and roasted meats.
