Borsao makes Suia in Campo de Borja, a rare single varietal Viognier for a region better known for Garnacha. From gravelly clay-iron soils by the Huecha river, barrel fermented and nine months on lees, it is rich and golden.

Description
Campo de Borja in Aragón is red wine country, dominated by Garnacha, which makes Borsao's Suia a rarity: a single varietal Viognier all but unknown in the denomination. The vines grow on the terraces of the Huecha river, on gravelly clay-iron soils that drain well and stress the vine into concentrated fruit. The warm continental climate ripens Viognier fully, which is why the wine reaches fourteen per cent alcohol and shows generous stone fruit. It is fermented in barrel and aged nine months on its lees. Barrel fermentation binds the oak into the wine, while long lees contact and the release of mannoproteins build a broad, creamy texture and a savoury depth that carries the ripeness. The colour is a bright golden yellow. The nose is ripe apricot and white peach with honey and a vanilla note from the oak. The palate is dry, full bodied and rounded, with melon and almond over a warm, gently spiced finish. Serve at 10 to 12 degrees in a large white glass.

The ripe fruit and creamy weight pair with roast chicken and roast pork, and stand up to roasted root vegetables and squash. The nutty, oaked character also works with hard cheeses such as aged Manchego or a mature Gruyère.
