Borsao grows this organic Garnacha at the foot of Moncayo in D.O. Campo de Borja, on vineyards between 550 and 800 metres. Aged in concrete and old stone vats, it shows raspberry, ripe plum and a peppery, herbal lift.
Description
Borsao works in D.O. Campo de Borja in Aragón, a region built on old-vine Garnacha. This organic bottling comes from high vineyards at the foot of the Moncayo massif, between 550 and 800 metres above sea level, where the altitude and the cold Cierzo wind keep the warm climate in check and preserve freshness in the ripe fruit. The wine is aged for four months in barrel and six months in old stone lagares, with much of its elevage in concrete rather than oak. Concrete and stone allow a slow, gentle oxygen exchange without adding wood flavour, so the lively raspberry fruit and the herbal, peppery character of high-altitude Garnacha stay in the foreground. The colour is intense cherry red. The nose bursts with raspberry and other red fruits over plum, black pepper, dried herbs and a stony, earthy note. The palate is generous and warm at fourteen and a half percent, yet kept fresh by the altitude, with soft tannin, liquorice and a savoury finish. Serve at 16 to 18 degrees. It pairs with grilled lamb, roast beef and roasted root vegetables.
