Description
Borsao works in Campo de Borja in Aragon, at the foot of the Moncayo massif, and this white blends Chardonnay with the local Macabeo. The grapes come from vineyards of around thirty years of age planted at some altitude on stony, pebble strewn soils. The height gives cool nights that hold on to acidity and aromatics, and the pebbles reflect warmth by day and drain well, so the fruit ripens cleanly. Picked and moved to the winery quickly to protect freshness, the wine is fermented at cool temperature in tank with no oak, a method that locks in the primary fruit and keeps the palate crisp and direct. Chardonnay brings a little weight and stone fruit while Macabeo keeps it fresh and floral. It pours a pale yellow with green highlights and shows ripe tropical fruit, pear and citrus on the nose, a rounded but bright palate and a clean, refreshing finish. This is an everyday white to drink young and well chilled at 8 to 10 degrees.
