Boris Champy makes this Savigny-lès-Beaune from biodynamic Pinot Noir on the Côte d’Or. Aged twelve months in oak, the Petit Aigle shows red cherry, raspberry and a fine earthy structure.
Description
Domaine Boris Champy farms biodynamically in Burgundy, working land in the Hautes-Côtes de Beaune and the village of Savigny-lès-Beaune on the Côte d'Or. The Pinot Noir grows on limestone and marl soils, the classic geology of the Côte that lends red Burgundy its acidity, mineral lift and elegant frame. A cool continental climate and a wide day to night temperature range slow ripening, so the fruit keeps its perfume and fresh acidity. The wine is certified biodynamic, natural and vegan, made with minimal intervention in the cellar. It spends twelve months in oak barrels, where slow oxygen exchange softens the tannins and knits the wine together while leaving the fruit clear. The colour is a pale to medium ruby. The nose shows red cherry, raspberry and a floral rose note, with a savoury earthiness underneath. The palate is medium bodied and fresh, with fine grained tannins, bright acidity and an earthy, lightly spiced finish. Serve at 15 to 16 degrees, a touch cooler than a fuller red. It pairs well with roast duck, game birds and mushrooms.
