Description
Boris Champy is a pioneering biodynamic grower in Burgundy, and this Pinot Noir comes from En Boeuf in the village of Pommard, in the Cote de Beaune. Pommard is known for firmer, more structured Pinot Noir than its neighbours, a character that comes from its clay rich soils with a high iron content over limestone. The cool continental climate and the slope give the fruit its acidity and savoury edge. Champy farms biodynamically and makes the wine naturally, certified vegan, with minimal intervention in the cellar. Ageing for around 12 months in oak barrels softens the tannins and adds a light spice while keeping the fruit and earth at the centre. Pinot Noir from Pommard leads with red fruit and a firm, earthy structure built to age. The wine is bright ruby, the nose offering red cherry and redcurrant with rose, forest floor and a savoury mushroom note. The palate is medium bodied with fine, firm tannins, fresh acidity and a long savoury finish. Serve at 15 to 16 degrees. It suits duck, game birds, beef and mushroom dishes.
