Description
Bologne Le Distillat Brut de Colonne is a white rhum agricole from the Bologne estate on Basse-Terre, Guadeloupe, drawn straight off the copper column at full strength and rested briefly before bottling. As a brut de colonne it captures the spirit at its most undiluted, made from fresh-pressed cane juice rather than molasses, and from a blend of red and black cane that gives it a particular vegetal snap.
Distilled low in a single creole column to keep the grassy congeners intact, it leads with fresh sugarcane, peppery heat and bright citrus, drifting into light anise and a faintly bitter close. The texture is oily and the finish long and warm, and despite sitting at 75.5% the alcohol stays well integrated, more rounded than raw. It works best in a Ti Punch or with a generous splash of water to open up the cane and floral side.
