Bologne Ice Rhum

Bologne is one of Basse-Terre's historic estates, and this Ice Rhum is its cane juice blanc, distilled from fresh-pressed sugar cane juice and bottled at 45% under Guadeloupe's IGP. The house iodine, saline character is part of its identity and shows up clearly here.

Distilled on column and bottled unaged, it noses on sugarcane, vegetal notes, candied fruit and florals, with a palate of sugarcane and lemon. In honesty, the texture runs thick and the spirit reads softer and rounder than a crisp agricole purist might want, so it sits better as an easy summer aperitif or a base for long mixed drinks than as a sharp, bone-dry sipper. Those chasing the bright, grassy snap of the leaner Guadeloupe blancs may find it gentler than expected, but the characteristic Bologne iodine note remains its calling card.
