Bologne is a Guadeloupe distillery working in the agricole tradition from fresh sugar-cane juice, and this Dark Sail leans toward a richer, spiced style at a soft 41%. Distilled on a column still, it trades the bright grassy snap of a blanc for a darker, more dessert-leaning character.
The nose is spicy and woody with figs and vanilla; the palate turns to cinnamon, brown sugar, dark chocolate and clove; the finish stays spiced and cinnamon-led with an unusual frankincense note and a light close.
