Description
Bologne Black Cane is a Guadeloupe agricole blanc, distilled from fresh-pressed sugarcane juice at the historic Bologne estate on Basse-Terre, this expression using a black cane variety as its calling card. Under Guadeloupe's IGP rather than the Martinique AOC, it is still a classic French-island white rum built on cane character.
Unaged and bottled to showcase the cane, it opens with sun-drenched sugarcane, mango, banana, lychee and white flowers over a citrus lift, then turns warm, oily and rounded on the palate with fresh cane sap leading the way. The finish stays warm and oily with a citrus edge, dry rather than sweet. The cane-variety angle gives it a slightly fuller, more gourmand fruit profile than a lean briny blanc. At 50% it is a fragrant, expressive Ti Punch rum and a lively base for a fresh Daiquiri.
