Description
Bodega Cerrón sits in the D.O. Jumilla, the arid inland strip running from southern Albacete down into Murcia, where the Cerdán brothers work biodynamic and organic vineyards planted to Macabeo, Airén and other older white varieties. The setting is hot and dry, but altitude and stony, limestone-influenced soils hold onto acidity and drive the wine's saline, flinty character. Fruit is picked by hand and the wine spends around eleven months in wood, a long élevage for a white of this weight; the extended contact with the lees builds a broader, more textured palate and softens the wood so it reads as structure rather than oak flavour. The result is pale straw with green tints. The nose is restrained and savoury, with flint, lemon and green apple over white flowers and a touch of thyme. On the palate it is dry and firm, the fruit carried by fresh acidity and a salty, almond-tinged finish. Serve at 10 to 12 degrees in a white wine glass. It works well with grilled white fish, garlicky prawns and fresh goat cheese.
