Description
Bimbache Vinícola is a young project on El Hierro, the smallest and most remote of the Canary Islands, led by Rayco Fernández and Pablo Matallana with a focus on native varieties and the island's varied terroirs. Bimbache Tinto is made from Listán Negro drawn from several vineyards in the south of the island. The soils are volcanic, dark and free-draining, and the vines grow ungrafted in an Atlantic climate cooled by altitude and trade winds, which holds acidity and keeps alcohol moderate. Volcanic ground tends to give reds a smoky, mineral character and a savoury lift. The wine is made without oak ageing, so the fruit and the site come through clearly. The colour is a bright medium red. The nose shows fresh red berries and cherry over black pepper, dried herbs and a stony, briny note. The palate is light and lively, with high acidity, soft tannin, a herbal thread of thyme and an earthy volcanic finish. Serve lightly chilled at 14 to 15 degrees. It suits grilled pork, poultry and lighter fish dishes.
