Bimbache works the remote volcanic island of El Hierro in the Canaries, and this Vidueño is made from Vijariego Blanco. Amber in the glass, it shows walnut, a smoky edge and an iodine, saline character from its Atlantic terroir.

Description
Bimbache Vinícola farms El Hierro, the smallest and most isolated of the Canary Islands, reviving old vine viticulture on volcanic ground. Quintero Vidueño is made from Vijariego Blanco, a native Canary white. The black volcanic soils drain fast and hold heat, while the constant Atlantic winds and the island's altitude keep freshness and drive the saline, iodine character that runs through the wine. This is a white made in an oxidative style: controlled air exposure during ageing converts some of the alcohol to compounds that give nutty, dried fruit aromas, taking the wine towards an amber colour and a savoury profile well away from a fresh young white. It pours a bright amber. The nose is intense walnut with a subtle smoky note and a distinct iodine, briny aroma from the coastal volcanic site. The palate is dry and textured, with almond and dried apricot over a firm saline, sea salt finish. Serve at 10 to 12 degrees in a white wine glass.






Additional information
The saline, oxidative style is made for the sea, from grilled prawns to salt cod and grilled sardines. It also stands up to hard nutty cheeses, and works well on its own as an aperitif with olives and almonds.
