Bimbache is the El Hierro project of Rayco Fernández, a merchant specialising in small Canary Islands producers who turned to making his own wines, taking the name of the island's early Bimbache inhabitants. El Hierro is the smallest and most remote of the western Canaries, and its volcanic soils are central to this wine: free-draining ash and basalt, ungrafted vines that survived phylloxera, and a strong Atlantic influence give a distinctive saline minerality and freshness despite the low latitude. The blend is led by Baboso Blanco and Listán Blanco with other white varieties, grown organically. After fermentation the wine spends nine months in oak barrels, which softens the acidity, adds a light creamy texture and a touch of vanilla and spice, and lets the volcanic character settle into a broader frame. It is medium gold in the glass. The nose shows white peach and melon with a saline, faintly smoky mineral note and a whisper of oak. The palate is medium-bodied and balanced, the ripe fruit carried by a salty freshness, finishing long with a nutty, gently spiced edge. Serve at 10 to 12 degrees.






Additional information
The oak weight and saline core suit grilled tuna, swordfish and monkfish, as well as octopus. It also works with roast chicken and pork, and the nutty, mineral finish makes it a good match for hard cheeses such as aged Manchego.
