Description
Domaine de Bila-Haut is Michel Chapoutier's Roussillon estate, and this Occultum Lapidem white comes from vineyards around Latour-de-France in the AOC Cotes-du-Roussillon. The site sits on dark schist, a heat-retaining metamorphic rock that warms the roots and drives full ripeness in the varieties planted here: Grenache Blanc, Grenache Gris and Vermentino. The Mediterranean climate brings hot, dry summers, while altitude and night-time cooling hold onto acidity and aromatic detail. Fruit is farmed biodynamically. Part of the wine is raised in stainless steel to keep the fruit fresh and precise, and part spends nine months in barrel, where slow oxygen exchange builds texture and a subtle savoury depth without masking the grape. The result is a broad, textured white of pale gold colour. The nose leads with white peach, ripe pear and dried herbs, backed by white flowers and a stony minerality that reflects the schist. The palate is full and dry, with melon and citrus peel carried by a saline, mineral finish. Serve at 10 to 12 degrees in a wide glass.







Additional information
Pour it with grilled sea bass or roast chicken with herbs, where the wine's weight and saline edge hold their own. It also works with paella and firmer sheep's cheeses such as aged Manchego. The stony minerality is a good foil for prawns and garlic.
