Bielle Serie Odyssee Dynamik 2019

Bielle is a Marie-Galante distillery known for cane-variety experiments and high-proof blancs, working entirely from fresh-pressed sugar-cane juice. This Serie Odyssee Dynamik is an unaged release bottled at 55%, in line with the Marie-Galante custom of bottling blancs strong, sitting under the Guadeloupe IGP rather than the Martinique AOC.

Distilled on a column still run low to keep the green cane congeners, it carries plenty of intensity at this strength. The nose is peppery and spicy with nutmeg, green apple and a caramel edge, and the palate brings woody, earthy allspice with more caramel sweetness of character than sugar. The higher proof gives it real grip and a warming bite, so a few drops of water open it up. Dry and spice-forward, it works neat for those who like power or as a bold base for a Ti Punch that stands up to lime.
