Bielle is a Marie Galante distillery known for cane variety experiments and high proof bottlings, working from fresh pressed sugar cane juice in the agricole style under Guadeloupe's broader IGP rather than the Martinique AOC. This Odyssee vieux carries a 2009 vintage, ten years of ageing in ex bourbon oak, and the eleve sous voile note pointing to maturation under a flor like veil of yeast, an unusual touch that can lend a savoury, slightly oxidative edge.
The nose offers dried fruit, wood, a toasted character and a hint of grapes, while the palate turns woody and earthy with citrus and more toast, finishing on a sour twist alongside wood, chocolate and a grassy note.
