This is the brut de fut, cask strength version of Bielle's seven year Canne Grise vieux, a single cane variety bottling from Marie Galante. The fresh pressed cane juice is distilled and matured for seven years in ex-Bourbon casks, then bottled without reduction at 57.9 percent so nothing is trimmed away.
At full proof an aged agricole shows its frame plainly, the grassy, peppery cane character carrying vanilla, dried fruit and toasted oak from the wood. Warm climate ageing tends to push the oak influence beyond what the seven years suggests. Unsweetened and undiluted, this is a dry, intense pour that rewards a few drops of water.
