Description
BEU Full Moon is a pechuga from the young Zurich based BEU Spirits, made in Oaxaca with native maestros from Espadin grown eight to ten years. Released as the Pan de Muerto edition in a run of just 116 bottles, it was left uncertified for cost reasons, so it is legally an agave spirit, a destilado de agave rather than certified mezcal, though made by full traditional method.
The agave is roasted in a conical underground oven, crushed by a horse drawn mill and fermented naturally in pinewood vats. The signature comes from a third, pechuga distillation in copper pot stills, with anise to the fore alongside pineapple, apple, mango, orange, sweet lime, guava, apricot, wild cherry, almonds, peanuts and a suspended turkey breast that rounds and tempers the spirit rather than adding anything meaty. Bottled at 46%, it leads with anise and warming spice over baked apple and rhubarb, closing long with lime, guava and almond.
