Description
Otto Bestué is a family estate in D.O. Somontano, tucked into the foothills of the Pyrenees in Aragón. The altitude and the cool nights that come off the mountains slow ripening and lock in acidity, which is why this Chardonnay stays fresh and taut rather than broad. Fermentation is carried out in stainless steel to keep the fruit clean and primary, with no oak involved, and the wine then rests one month on its fine lees. That short lees contact rounds the texture slightly through the release of mannoproteins while leaving the crisp profile intact. The colour is pale lemon with green flashes. The nose is bright and orchard driven, with green apple, pear and lemon over a light floral note. The palate is dry and fresh, the fruit framed by high acidity and a clean, faintly doughy finish from the lees. This is Chardonnay in its leaner, unoaked register, closer to Chablis than to a barrel fermented style. Serve well chilled at 8 to 10 degrees. It is a natural match for white fish, shellfish and fresh salads.
