Description
Bernardo Estévez y Xico Mandín Terra is a biodynamic white from D.O. Ribeiro in Galicia, blending Doña Blanca, Treixadura and Verdejo, the region's traditional white varieties. The wine follows a low intervention philosophy in the vineyard, working with the ecosystem rather than against it, with no chemical treatments and a light hand in the cellar. Ribeiro is a green, hilly, Atlantic influenced region where cool, damp conditions and river valleys keep the whites fresh and aromatic. Treixadura gives structure and orchard fruit, Doña Blanca adds freshness and Verdejo a citrus lift. The wine is aged for nine months in oak barrels, where slow oxygen exchange and lees contact build texture, a subtle creaminess and savoury depth while keeping the wood flavour in check. The result is a white that stays fresh but gains weight and complexity. The colour is bright, and the nose leads with green apple and pear over white flowers and a hint of citrus. The palate is textured and rounded from the barrel ageing, balanced by clear acidity and a long, mineral finish. Serve at 10 to 12 degrees in a white wine glass, with white fish, roast chicken, shellfish or pork.
