Los Bermejos grows volcanic Malvasía on the black lava soils of Lanzarote. Fermented in barrel and rested on its lees, this white shows apricot, white peach and a distinct saline, volcanic character behind its texture.

Description
Los Bermejos is one of the historic names of Lanzarote, in the Canary Islands, where Malvasía Volcánica has been grown for centuries. The vines sit in hollows scooped from black volcanic ash, each one sheltered by a low stone wall against the constant Atlantic wind. The ash mulch traps overnight moisture and keeps the roots cool, which lets the grapes ripen slowly under strong sun while holding their acidity and their salty, mineral signature. This bottling is fermented in barrel and rested three months on its lees, and the regular stirring of those lees builds a creamy weight and softens the wine without covering the fruit. It pours bright straw. The nose leads with apricot, white peach and melon over a waxy, floral note, and the palate is textured and dry, with citrus peel and a firm saline streak that comes straight from the lava. The finish is long and savoury. Serve at 10 to 12 degrees in a white glass.







Additional information
Pour it with grilled tuna, monkfish or seared white fish, where the wine's texture and salinity hold their own. It is equally good with roast chicken or garlic prawns. The volcanic edge makes it a natural with anything from the sea.
