Benoit Courault makes this Chenin Blanc as a natural wine on seven hectares in Faye d’Anjou, in the Loire. Farmed organically with minimal intervention and aged six months in barrel, it shows orchard fruit, beeswax and a honeyed, textured depth.

Benoit Courault moved from the restaurant trade into winemaking, trained at the Beaune wine school, and settled on seven hectares in Faye d'Anjou in the Loire, where he works organically and in the natural, low-intervention style he learned from Eric Pfifferling. Empreinte is made from Chenin Blanc, the Loire's great white grape, whose high natural acidity and capacity for texture make it well suited to this hands-off approach. The vineyards sit on the schist and clay soils of the Anjou, which give the wine a mineral spine and drive. Natural winemaking here means native yeasts, minimal added sulphur and no fining or filtering, choices that let the fruit and site come through with a slightly savoury, textured character. The wine is aged six months in barrel, where slow oxygen exchange and lees contact round the palate and add breadth. The 2024 is bright and lightly hazy. The nose shows green apple, pear and white peach over beeswax and honey with a herbal edge. The palate is dry and textured, its acidity firm and its finish long and saline. Serve at 11 to 13 degrees in a white wine glass.







Additional information
The texture and acidity of Chenin suit baked white fish, roast chicken and pork. It is a classic match for fresh goats' cheese and also carries roasted root vegetables. Serve lightly chilled in a broad glass.
