Cascina degli Ulivi is a biodynamic Piedmont farm making natural wines since the 1970s. This single variety Merlot rosé is fermented with native yeasts, showing ripe cherry and plum, a savoury earthy edge and a dry, fruit driven palate.
Description
Cascina degli Ulivi is a family farm in Piedmont, a pioneer of biodynamic and natural winemaking, farming biodynamically since 1984 and producing natural wines since 1977. Alongside the vines they grow cereals and vegetables and keep a little livestock, treating the estate as a mixed agricultural whole. This rosé is a single variety Merlot, made with the same low intervention philosophy. The vineyards sit on the clay and marl soils of the Gavi area, where a continental climate with warm days and cool nights gives ripe fruit while holding acidity. The grapes take brief skin contact for colour, then ferment with native yeasts in stainless steel without additions, giving a wine that is dry, savoury and true to its origin. The colour is a deep pink. The nose shows ripe red fruits and stone fruits, cherry and plum, over a savoury, earthy note from the natural winemaking. The palate is dry and fruit driven, with red berry fruit, fresh acidity and a slightly textured, savoury finish. Serve at 10 to 12 degrees. It suits charcuterie, grilled pork, poultry and tomato based dishes.
