Ramon Jane works naturally in D.O. Penedes, reviving old native varieties. Baudili Negre 2025 is an unusual blend of Cabernet Sauvignon with the white grapes Xarel-lo and Parellada, made organically, with bright red fruit and a fresh, herbal lift.
Description
Ramon Jane Viticultor farms in D.O. Penedes in Catalonia, taking cues from the surrounding landscape and working to recover ancient native varieties through organic and natural methods. Baudili Negre 2025 is an unusual co-planted style blend, leading with Cabernet Sauvignon alongside the white Penedes grapes Xarel-lo and Parellada, the varieties more often seen in Cava. The interior Penedes climate is Mediterranean but tempered by altitude and cool nights off the coastal hills, which slows ripening and keeps acidity high, while the limestone and clay soils lend freshness and a mineral edge. Including white grapes in a red blend lightens the colour and tannin and lifts the aromatics, a traditional field blend approach. Farming is organic and the wine is made naturally on ambient yeasts. It spends six months in barrel, enough to round the tannins through gentle oxygen exchange while keeping its bright, primary character. In the glass it is a medium ruby, with a nose of red berries, plum and black pepper over dried herbs and earth. The palate is fresh and savoury, with light, supple tannin, lively acidity and a herbal, mineral finish. Serve lightly chilled at 14 to 16 degrees. It suits grilled meats and tomato based dishes.
