Description
Baudili Blanc is the work of Ramon Jané, a young winemaker who trained in oenology and then took over vineyards first planted by his grandparents in the Alt Penedès. He works with indigenous Catalan varieties, here Xarel·lo and Parellada, and farms without chemical fertilisers, fungicides or pesticides. The wine is made naturally and is suitable for vegans. Xarel·lo brings body, structure and a slightly waxy, herbal character, while Parellada, grown in the cooler, higher parts of the Penedès, adds delicacy, floral aromatics and fresh acidity. The wine is fermented and raised without oak and bottled young to keep its bright, primary fruit and the raw mineral cut of the Penedès limestone and clay soils. Minimal intervention in the cellar means the grape and site come through clearly. Expect a pale straw colour, a nose of green apple, lemon and white flowers, and a dry, taut palate with pear, thyme and a saline finish. Acidity is the driver, so it stays lively and refreshing. Serve well chilled at 8 to 10 degrees.
