Batič makes this Cabernet Sauvignon rosé in Slovenia’s Vipava Valley, on land farmed since monks worked it 400 years ago. Biodynamic and natural, it is dry and savoury with red berries, citrus and a wild herbal grip.
Description
Ivan Batič and his son Miha farm in the Vipava Valley in western Slovenia, on land worked since monastic times more than 400 years ago. Batič is a committed natural and biodynamic estate, distrustful of technical intervention and devoted to expressing the vineyard directly. This rosé is made from Cabernet Sauvignon grown in the Vipava, a cool valley funnelled by the Burja wind that sweeps down from the mountains, drying the vines, holding back disease and locking in acidity. Winemaking is low intervention, with native yeast fermentation and no oak or additions, so the wine carries a little more texture and savour than a conventional pink. The colour is a fresh, slightly turbid pink. The nose is bright but savoury, with red berries and red currant, citrus peel, dried herbs and an earthy undertone. The palate is dry and energetic, with firm acidity, a light phenolic grip and a clean, herbal finish. Serve lightly chilled at around 10 to 12 degrees. It suits grilled fish, salads and fresh cheeses.
