Description
Batič makes this wine from Rebula, the local name for Ribolla Gialla, an indigenous grape of the Vipava Valley in western Slovenia. The family estate, based in Šempas, farms biodynamically and organically. The Vipava Valley sits where alpine air meets a Mediterranean climate, and its marl and sandstone soils give the wines fresh acidity and a clear mineral line. Rebula is a naturally high-acid variety well suited to this cooler, breezy site. This bottling is aged on its fine lees, with that contact releasing mannoproteins that add texture and a soft savoury weight while keeping the wine fresh, and no oak is used so the fruit and the stony character stay clean. The colour is pale straw with green highlights. The nose is bright, with lemon, green apple and white peach over white flowers. The palate is dry and crisp, with lively acidity, citrus peel and a saline, mineral finish. Serve at 9 to 11 degrees.
