Description
Biancammare is a coastal Grillo from Nino Barraco, a natural winemaker working around Marsala on the west coast of Sicily. Grillo built its reputation as a base for fortified Marsala, but here it is made as a dry, unfortified white in the older regional style that predates the British taste for sweetness. The vines grow close to the sea on sandy, calcareous soils, where salt-laden winds and strong sunlight are balanced by cooling breezes off the water, holding freshness in a hot climate. Farming is biodynamic and the winemaking is minimal and natural, with the wine raised for six months in stainless steel to keep the fruit direct and the salinity intact. Stainless steel and the absence of oak preserve primary aromatics and the mineral, saline signature of the site. The wine is bright straw yellow, with lemon, white peach and dried Mediterranean herbs over a distinct sea breeze and almond edge. The palate is dry and textured, carried by firm acidity and a savoury, salty finish. Serve at 8 to 10 degrees.

A natural match for grilled prawns, sea bass and plates of raw oysters. The salinity and acidity also handle oily fish such as sardines, anchovies and seared tuna, and it works well with a Sicilian fish couscous.
