Barbancourt Three Stars is the work of Haiti's most famous distillery, founded in 1862 and still family run. Unusually it works from sugar cane honey, a concentrated cane syrup, distilled on a column still, sitting between the island's wild clairins and the molasses mainstream.
Aged around four years and bottled at 40%, this is a soft, approachable Haitian rum that stays on the drier side, with the cane and light oak coming through rather than heavy sweetness. A versatile bottle that sips easily and works equally well in a daiquiri or a punch.
