    A 9 year old Ballechin from the Paris house La Maison du Whisky, 2005, at 59.1%. Soft ash and a rich, nutty oil. Owned since 2002 by the independent bottler Signatory Vintage. The tiny stills and worm tubs give a rich, oily, smoky spirit. Signatory’s wide cask range gives it an unusual variety of finishes. This is Ballechin’s heavily peated, oily style.

    A Ballechin of a 9 year old chosen by the Paris house La Maison du Whisky, distilled in 2005, from cask 406, bottled at 59.1%, one of 242 bottles. Ballechin is the heavily peated single malt from Edradour, the tiny farm distillery at Pitlochry. It is one of the smallest traditional distilleries in Scotland, long run by just two or three hands.

    The spirit was distilled slowly from peated malt in the old farm stillhouse, giving a rich, peated Highland spirit. Ex-Bourbon casks held it, the gentle American oak letting the oily make lead. In these extractive early years the oak gives vanillin (vanilla) and lactones (coconut) under a bright, ashy peat smoke. Refill oak lets the rich, oily Edradour character lead the way. The worm tubs leave an oily weight that carries through the years in cask. Maturation in the dunnage warehouses at Pitlochry is slow and steady.

    At 59.1%, undiluted, it is deep and concentrated. A smoky, oily sweetness, with a soft vanilla from the oak. The texture is oily and smoky, the fruit lifted by vanilla. A rich finish ends on soft ash and dried fruit. This is a rich, smoky malt from one of Scotland's smallest distilleries.
