Baileys created the cream liqueur category in 1974, marrying Irish whiskey with fresh dairy cream in a stable emulsion, and it remains the original and best selling name in its class, sold in over 150 countries. This special edition keeps the classic base and dresses it in the flavour of birthday cake, with vanilla and butterscotch to the fore, bottled at 17%.
The nose is sweet with vanilla, butterscotch and a hint of baked cake, the palate full bodied and creamy with vanilla, butterscotch and a gentle sweetness reminiscent of cake, the finish long with a soft vanilla close. Behind the bar it is a dessert and body ingredient, adding dairy richness, vanilla sweetness and weight to a sweet cocktail, a layered serve or a creamy long drink, and it tops desserts such as gateaux or panna cotta. It pours neat or over ice to bring out the flavours. As a dairy product it should be kept cool once opened and used within a few months.
