An unaged white agricole from Baie des Tresors in Martinique at 54 percent, distilled from fresh cane juice and bright with fresh cane, lime zest, citrus and light florals, a punchy yet well balanced blanc.
Description
Baie des Tresors is a Martinique distillery working in the agricole tradition, fresh sugar cane juice rather than molasses, on the only island in the world with a rum AOC. Under that appellation added sugar is forbidden and only colour caramel is permitted, so this unaged blanc is a dry, pure expression of the cane.
Bottled at a punchy 54 percent, it puts the raw cane character front and centre in the way low strength creole column distillation allows. The nose is fresh sugarcane, vegetal and grassy with a floral lift, the palate brings sugarcane, citrus and herbal notes, and the finish stays fresh and vegetal with lime and cane running through. There is a bright, intensely lemony streak and a delicate floral edge, all kept in balance despite the strength. A lively introduction to white agricole, made to be sipped neat or built into a fresh, zesty Ti Punch.
