Description
Avión is a highland tequila built from Blue Weber agave grown in the Los Altos plateau of Jalisco. To deepen the natural aroma of the agave, the piñas are slow roasted at lower temperatures, and this Reposado is then rested six months in oak, three times the two month minimum the class requires.
The extra time in cask shows in a light amber colour and an aroma the house describes as fire roasted agave with a thread of rosemary. The palate is floral with orchard and stone fruit, cherry, peach and pear, over the cooked agave base, and it is bottled at 40%. The slow low temperature cook is the brand's signature, aimed at protecting the highland agave's fruit and keeping the oak in a supporting role rather than letting it dominate.
