Description
Grifi takes its name from the mythical griffin and is Avignonesi's Tuscan red blending Cabernet Sauvignon with Sangiovese, farmed biodynamically by what is recognised as the largest biodynamic estate in Italy. The pairing of grapes is a Tuscan classic, with Sangiovese supplying bright acidity, sour cherry and an earthy, savoury core, and Cabernet adding darker fruit, firm tannin and structure. The hill vineyards sit on clay and limestone soils that hold the natural freshness of Sangiovese, while warm days ripen the Cabernet evenly. The wine is aged twenty-four months in oak. The long élevage and slow oxygen exchange through the wood round the tannins, integrate the two varieties and build a savoury, cedar-edged complexity. The colour is a dark ruby red with violet highlights. The nose shows blueberry and blackberry alongside incense, dried herb and a graphite, mineral note. The palate is medium to full and classically structured, with firm but fine tannins, lifted acidity and a long, savoury finish. Serve at 16 to 18 degrees and decant before serving. It is a natural partner for grilled and roasted meats and tomato-based Tuscan dishes.
