Description
Avignonesi is recognised as the largest biodynamic estate in Italy, and Desiderio is its varietal Merlot from Tuscany, named for the prized Chianina bull once housed at the property. Grown under biodynamic and organic farming, the fruit comes from Tuscan hill vineyards whose clay and limestone soils suit Merlot, giving ripe dark fruit while the elevation and cool nights preserve freshness and fine tannin. The wine is aged for eighteen months in oak barrels. Slow oxygen passing through the staves softens the tannins and adds spice and structure, while extended ageing knits the components together and lends polish. The colour is a deep ruby red. The nose is layered, with blackberry, sour cherry and raspberry over aromatic herbs and a touch of dark chocolate and sweet spice from the wood. The palate is full and structured, the tannins ripe and rounded, the fruit carried by good acidity into a long, savoury finish. This is a wine that rewards a few years in the cellar. Serve at 16 to 18 degrees and decant an hour before pouring. It suits roasted and grilled red meats and rich, savoury dishes.
