Description
Avignonesi is a long-established Tuscan estate, certified for its organic and biodynamic farming and its commitment to sustainability. Cantaloro is its Rosso Toscana, an IGP red built on Sangiovese with Cabernet Sauvignon, Merlot, Canaiolo and Syrah. Sangiovese is the backbone of central Tuscany, a thin-skinned, high-acid grape that gives bright red fruit, firm tannin and a savoury, earthy character, while the Cabernet and Merlot add depth and dark fruit and the Canaiolo softens the blend. The vineyards sit on Tuscany's clay and limestone soils under a warm, dry continental climate that ripens the fruit fully while the cool nights preserve acidity. The wine is raised over eighteen months across stainless steel tanks and oak barrels: the steel keeps the fruit fresh and primary, while time in barrel allows slow oxygen exchange that rounds the tannins and adds light spice. Malolactic fermentation softens the natural acidity into a smoother texture. The colour is ruby. The nose shows cherry, red berries and plum with dried herbs, tobacco and a touch of pepper. The palate is medium bodied, fresh and savoury, with grippy but ripe tannins and a clean finish. Serve at 16 to 18 degrees. It suits grilled meats, tomato-based pasta and hard cheeses.
