Description
Augustus Forum works in D.O. Penedès in Catalonia, taking its name from the Via Augusta, the Roman road that once crossed the region. This rosé blends Cabernet Sauvignon and Merlot and is certified organic and vegan. After a careful harvest the grapes are destemmed and given a maceration of around twelve hours at a constant 8 degrees, a cold soak that pulls a deeper colour and more fruit from the skins before pressing. Fermentation then runs at 16 degrees for roughly two weeks, a controlled temperature that protects the aromatics and keeps the wine fresh. Penedès has a Mediterranean climate tempered by sea breezes and altitude, which holds acidity in the Bordeaux varieties grown here. The blend plays to each grape: ripe Merlot gives red berry and plum flesh, while Cabernet Sauvignon brings structure, red currant and a peppery edge. The result is a rosé of more intense colour than the pale Provence style, with aromas of strawberry, cherry and plum. The palate is dry, fruity and structured, with body and a clean finish. Serve chilled at around 9 to 11 degrees with food rather than purely as an aperitif.
