Description
Bottled by Auchentoshan in 2012 as a globally released 32 year old limited edition from 1979 vintage stock, with 1000 bottles drawn at cask strength of 50.5%. The release sits in the distillery's premium tier, presenting long matured Oloroso cask stock laid down during the transition between Stanley P Morrison and Morrison Bowmore ownership.
Distilled in 1979 from 100% unpeated malted barley with Loch Cochno water, the wash was fermented around 62 hours across Douglas fir and stainless steel washbacks before passing through Auchentoshan's three copper pot stills. Triple distillation lifts spirit cut to around 81% ABV, the highest in Scotland, with the extra copper contact and intermediate still stripping sulphur compounds and heavy fusel oils. The cleaner, ester led new make was filled directly into European oak Oloroso sherry casks for on site dunnage maturation.
Three decades in Oloroso casks built deep sherry character into the lighter triple distilled base. Ellagitannins and gallic acid from European oak gave grip and dried walnut, while oxidative aldehydes such as acetaldehyde and syringaldehyde developed nutty, leathery rancio. Fermentation derived sotolon contributes dried fig and curry leaf, and slow concentration of glycerol adds body. At 32 years the tertiary stage drives integration of the heavy sherry compounds with the spirit's underlying citrus and almond signature.
