Auchentoshan Individual Cask Bottling 31 Years Old 1966

Bottled by Auchentoshan in 1997 as part of the Individual Cask Bottling range, drawn from cask 808 of 1966 vintage stock at natural strength of 47.1% for the Polish market. The Individual Cask Bottling programme was the distillery's first dedicated single cask range, presenting long matured stock from the Dalmuir archive cask by cask.

Distilled in 1966 during the Eadie Cairns ownership era, the wash was made from 100% unpeated malted barley with Loch Cochno water and fermented around 62 hours across Douglas fir and stainless steel washbacks. Auchentoshan runs every drop through three copper pot stills, with the intermediate still and final cut at around 81% ABV giving the highest spirit strength in Scottish single malt production. The extra copper contact strips sulphur compounds and fusel oils while concentrating light esters, leaving a clean spirit filled into a single ex Bourbon American oak cask.

Thirty one years in temperate Lowland maturation delivered patient oak extraction. Lignin breakdown drove vanillin, cis and trans oak lactones added coconut and sweet wood, and char layer interaction produced furfural alongside Maillard derived caramelised sugars. Holding 47.1% after three decades indicates a tighter cask with slower evaporative loss, with tertiary stage ester transformation integrating fruit and oak into a focused single cask profile.
