Auchentoshan Individual Cask Bottling 31 Years Old 1966

Bottled by Auchentoshan in 1997 as part of the Individual Cask Bottling range from cask 807 of 1966 vintage stock, drawn at natural strength of 44.1% for the Netherlands market. The Individual Cask Bottling programme was the distillery's first single cask range, releasing long matured stock from the archive at Dalmuir cask by cask.

Distilled in 1966 during the Eadie Cairns ownership era, the wash was made from 100% unpeated malted barley with soft Loch Cochno water and fermented around 62 hours in Douglas fir and stainless steel washbacks. Auchentoshan triple distils every drop through three copper pot stills, with the intermediate still and spirit cut at around 81% ABV stripping sulphur compounds and fusel oils. The high copper contact concentrates light esters such as ethyl hexanoate and isoamyl acetate, leaving a delicate spirit filled into a single ex Bourbon American oak cask.

Thirty one years in cool, damp Lowland conditions delivered measured oak extraction. Vanillin from lignin breakdown gave vanilla, cis and trans oak lactones added coconut, and char layer contact released furfural with Maillard derived caramelised sugars. Natural strength of 44.1% reflects steady evaporative loss across three decades, with tertiary stage ester transformation lending an integrated, polished finish over the lighter triple distilled spirit base.
