Auchentoshan Individual Cask Bottling 31 Years Old 1965

Bottled by Auchentoshan in 1997 as part of the Individual Cask Bottling range, drawn from cask 2502 of 1965 vintage stock at natural strength of 49.3% for the Netherlands market. The Individual Cask Bottling programme was the distillery's first single cask range, presenting long matured stock from the Dalmuir archive cask by cask at natural strength.

Distilled in 1965 during the Sanderson era prior to Eadie Cairns ownership, the wash was made from 100% unpeated malted barley with Loch Cochno water from the Kilpatrick Hills and fermented around 62 hours in Douglas fir and stainless steel washbacks. Auchentoshan triple distils every drop through three copper pot stills, with the intermediate and spirit stages lifting cut to around 81% ABV. The extra copper contact strips sulphur compounds and fusel oils while concentrating ethyl hexanoate, isoamyl acetate, and other light esters, giving a delicate spirit filled into a single ex Bourbon American oak cask.

Thirty one years in cool, damp Lowland dunnage drove measured extraction. Lignin breakdown released vanillin, cis and trans oak lactones added coconut and sweet wood, and char layer contact built furfural with Maillard derived caramelised sugars. Holding 49.3% across three decades reflects a tight cask and minimal evaporative loss, with tertiary stage ester transformation lending polished, integrated complexity over the lighter triple distilled spirit base.
