As Bateas is a small family white from Adega Pombal, made just outside Rías Baixas on granite soils. A short skin maceration and cool fermentation give an Atlantic white with stone fruit, citrus and a saline, mineral edge.

Description
As Bateas is made by Adega Pombal, a small family winery working in the Rías Baixas area of Galicia, though its vineyards sit just outside the denomination. This is Atlantic Spain, cool, green and wet, where whites are built on high acidity and a saline freshness. The fruit comes from vines between 12 and 50 years old grown on granite with pockets of clay, granite being the soil that gives the region's whites their stony, mineral cut. After destemming the grapes are pressed and given a 12 hour maceration, drawing extra aroma and flavour from the skins, then racked clear before fermentation at a controlled 18 degrees, a temperature that preserves the delicate aromatics without stripping texture. The result is a fresh, mineral Galician white. The colour is pale lemon. The nose shows white peach and apricot over lemon and white flowers, with a stony, sea breeze note behind. The palate is dry, crisp and light, with green apple and a saline mineral edge carried on bright Atlantic acidity to a clean finish. Serve well chilled at 9 to 10 degrees.
