ArteNOM Selección de 1579 Tequila Blanco comes from NOM 1579, the El Pandillo distillery of Felipe Camarena in Jesús María, Los Altos, the fourth generation distiller behind G4, Pasote and Volans. ArteNOM is a curator line that bottles single distillery expressions under their NOM, and this blanco shows the El Pandillo signature undiluted by cask, presented additive-free.
Production follows the expressive highland stack: agave cooked in traditional brick ovens, crushed with a mechanical tahona, then distilled in copper pot stills using a roughly even split of harvested rainwater and mineral rich deep well water. A distinctive touch is a 24 hour oxygenation before bottling. The result is clean and mineral with rich cooked agave: spring rain and mint on the nose, then a velvety, almost wine like texture carrying fresh chilli, white pepper and mint. Bottled at 40.7%.
