Description
Cognac specific releases differ from generic Brandy Cask bottlings in their cask origin. Cognac is produced under appellation rules in the Charente region of southwest France and aged in casks of French oak, typically Limousin or Tronçais. The resulting cask carries the specific signature of Cognac maturation: long oxidative ageing under controlled cellar conditions, producing rancio derived aroma compounds and the characteristic floral fruit profile of long aged grape eaux de vie. Arran sourced and finished spirit in these casks during the experimental period of the early to mid 2000s.
Primary maturation runs in first fill ex Bourbon American oak barrels at Lochranza, with secondary transfer into ex Cognac casks of French oak. The finishing period varies by release. Bottled at 58.3% without chill filtration and without added colour.
Cognac casks deliver a distinctive flavour signature absent from generic brandy or pure American oak maturation. French oak contributes a finer grain tannic structure and a higher ratio of whisky lactones to the cis isomer, giving cleaner spice and less coconut compared to American oak. The Cognac itself contributes long aged grape spirit esters and the floral rancio aldehydes, producing a layered orchard fruit, dried apricot and gentle peppery finish in the resulting whisky.
