Cognac Cask bottlings appeared across multiple batches in the Arran catalogue during the mid 2000s, with each release tracked separately by Whiskybase as a distinct SKU reflecting batch variation rather than a numbered series. The cask sourcing for Cognac specifically meant working with French wood from Charente AOC suppliers, distinct from the broader brandy cask sourcing that included Armagnac and other grape spirit origins.
Primary maturation runs in first fill ex Bourbon American oak barrels at Lochranza, with the Cognac cask finishing phase carried out in French oak casks of Limousin or Tronçais origin. Bottled at 58.2% with no chill filtration and no added colouring.
The French oak of Cognac casks produces a different extraction profile from the American oak used in standard Arran maturation. French oak contains a higher proportion of ellagitannins and a lower ratio of cis to trans whisky lactones, producing a finer, drier spice profile with less coconut and more structured tannin. The Cognac residue contributes long aged grape spirit congeners including ethyl heptanoate, ethyl decanoate and the rancio derived aldehydes that develop in extended cask ageing of French brandies.
