Description
A 9 year old Ardmore released by Duncan Taylor in 2017 under The Octave programme, distilled in 2008 and finished in a small Oloroso seasoned octave cask. Octaves are 50 litre format casks named after the medieval English measure, used by Duncan Taylor to accelerate wood interaction during a finishing period after standard ex Bourbon maturation. The small surface area to volume ratio amplifies oak derived compounds significantly compared to standard hogshead or butt formats. 64 bottles for the German market from cask #1916664 at 53.1% natural strength.
Distilled in 2008 at the standard Ardmore peat level of 12 to 14 ppm phenol, the spirit was filled at 63.5% into ex Bourbon American oak and matured at Kennethmont under the post 2001 steam heating regime. After standard maturation it was transferred to a 50 litre Oloroso octave for the finishing period before bottling at nine years total age, with no chill filtration applied.
The octave format drives concentrated cask interaction in a short finishing window. Polyphenol oxidation gives accelerated rancio depth, with melanoidins reading as walnut, dried fig and dark caramelised fruit. Eugenol and vanillin from the seasoned oak give amplified clove and warm baking spice. Steam era distillate lacks the coal era Maillard register, leaving cleaner apple and pear esters from the Kerry yeast component competing with the wood depth. Inland peat phenols read as heather smoke and earthy phenolic underneath.
