Description
A 27 year old single cask Ardmore from Gordon & MacPhail's Connoisseurs Choice Cask Strength range, distilled in 1990 and bottled in 2018. Allied Distillers held Ardmore through this period and routed nearly all production into Teacher's Highland Cream, leaving the single malt market entirely to independent bottlers with long term warehouse contracts. G&M's Elgin operation has produced almost the complete record of aged Ardmore across the 1990 to 2000 vintages, and this release sits inside that lineage. 179 bottles for Germany.
Filled in 1990 at 63.5% into a single ex Bourbon refill American oak cask, the spirit matured in dunnage at Kennethmont under the wash stills' direct coal heating regime. Twenty seven years brought the strength down to 52.2% naturally, with no chill filtration applied. The Ardmore phenol level at 12 to 14 ppm and the 54 to 55 hour fermentation on Mauri and Kerry yeast both stayed standard through this period.
Time in refill Bourbon develops oxidative complexity rather than aggressive wood. Vanillin and syringaldehyde from lignin sit alongside coconut and pine notes from cis whisky lactone. Coal era furfurals built up during direct flame distillation read as baked apple and pastry crust, while ethyl hexanoate carries apple and pear over a base of honeyed barley. Inland peat reads at this age as heather smoke, leaf mulch and earthy phenolic, integrated rather than dominant.
