Description
Gordon & MacPhail, founded 1895 in Elgin by James Gordon and John Alexander MacPhail, is Scotland's oldest established independent bottler. The Spirit of Scotland is one of G&M's secondary single cask ranges, sitting alongside the long running Connoisseurs Choice programme and the higher tier Cask range. The 1991 vintage carries bridge era significance, drawn from Allied Distillers's intermittent reopening years between the 1981 mothball and the 1996 final closure.
Filled into refill American oak cask #2018 in 1991 during Allied's intermittent reopening and matured on Islay for eleven years across the 1996 final closure and the 1997 Glenmorangie acquisition. Bottled in 2003 at 51% ABV for the German market, non chill filtered with no added colour. The 51% reading after eleven years sits in expected range for refill bourbon maturation.
Eleven years of refill American oak interaction builds early mid age expression. Cis and trans oak lactones (coconut, oiled wood) build at moderate concentration, hemicellulose furans deliver emerging caramel and almond, and lignin vanillin and syringaldehyde layer vanilla and baking spice. The 1991 Allied era peat phenols (guaiacol, syringol, 4 methylguaiacol, p cresol) read at near full intensity. The Ardbeg purifier ester signature delivers concentrated pineapple, lemon and tropical fruit beneath the phenolic core.
